Chocolate Cashew Spread

A nutty chocolate lovers spread.
Rough Measures:
  • 250g / 3 cups plain unsalted cashews
  • 3 tablespoons maple syrup
  • 3 tsp raw cacao powder (cocoa will work if you don't have cacao)
  • 1 tablespoon melted coconut oil
  • Optional - 2 tablespoons strong black coffee
  1. Optional - roast cashews in oven at 200 C for 10 minutes, leave to cool.
  2. Add all ingredients into a high speed blender and blend for 5 minutes, stopping to scrape down the sides, until you have a soft, gooey spread.
  3. Should you wish to have a more liquid consistency, simply blend for longer.
Ideally you need a high speed power blender like the Optimum G2.1 for this recipe, other high speed blenders will work.
You can also make this in a food processor, but it may take longer than if using a high speed power blender. I would guess it would take 10-15 minutes using a food processor.
