Hey folks. Here I am! How’s things? I know things have been a little quiet around here, I won’t bore you with the details because we’ve all got our own things going on! Things happen, ya know. I read THIS great article over the weekend, and it hit home a lot. So I’ll keep it short and sweet tonight, so we can all have some happy heart time with our loved ones, plus I’ve got an overdue hot date with my sofa this evening. Hold onto those happy hearts.
A long time nut butter fan, I was craving some suitable spread for an upcoming pancake recipe (stay tuned for that later this week!), cashews were on my mind, but I wanted something a little thicker and less liquid than most nut butters. I decided to try to create this chocolate cashew spread, the same way you would make any nut butters, only with a little less time/effort (win/win right?) This resulted in a spread just as tasty, but with a little more volume, and would hold its own more than butters. I took inspiration from Kellie’s fantastic Espresso Peanut Butter recipe; chocolate, coffee, nuts, in one fantastic mouthful? Yes please.
- 250g / 3 cups plain unsalted cashews
- 3 tablespoons maple syrup
- 3 tsp raw cacao powder (cocoa will work if you don't have cacao)
- 1 tablespoon melted coconut oil
- Optional - 2 tablespoons strong black coffee
- Optional - roast cashews in oven at 200 C for 10 minutes, leave to cool.
- Add all ingredients into a high speed blender and blend for 5 minutes, stopping to scrape down the sides, until you have a soft, gooey spread.
- Should you wish to have a more liquid consistency, simply blend for longer.
You can also make this in a food processor, but it may take longer than if using a high speed power blender. I would guess it would take 10-15 minutes using a food processor.
